What do you do with leftover steak? I love making a good breakfast scramble.

    My leftovers are diced up almost identically, and I meal prep some of my lunches with them. Usually, it can make 1-2 days worth, mixing with veggies, grains, etc.

    Leftover steak goes into a breakfast burrito for me! Scrambled eggs, steak, salsa, cheese. Maaayyybe some sort of potatoes, but that’s a rarity.

    Unlike everyone else here, I often have leftover steak because if I usually make a ribeye that’s 2-3 lbs. I eat it cold for lunches for a few days because if I microwave it, then it’s no longer rare

    I make quesadillas with leftover streak. If I have a roast (usually do rib roasts for Xmas and Easter) I’ll make beef stroganoff with the leftovers.

    This is one of those things where you should just put the steak on top, after. Warm quickly in a pan, sous vide, etc, but recooking it entirely in a scramble is going to give you greyed meat, maybe even tasting a bit warmed over or old. I love steak and eggs but this is not the way.
