  1. I think you need a proper pepper grinder! Look up the "Kuhn Rikon Vase" grinders. Best bang for your buck ceramic grinder that also looks elegant. Highly suggest it. Also hit up Penzey's spices to get some nice peppercorns to fill it with. When I made your cacio e pepe, all I could think about was how glad I was to have a grinder that could PUMP out the pepper. Awesome video as usual, keep it up.

  2. I find the combo of the corn syrup in commercial ketchup with cornstarch makes for a really glossy sauce in other applications. I’ve never heard of this particular dish but I’ll definitely give it a shot!

  5. Been following for a while and i hope to see you gaining more and more traction, because you got out plenty of good, down to the matter content already!
    It's grill season and watching you cook that burger stimulated my interest 😁
    This seems the kind of recipes that the larger quantity the better, because you can stew the onions for longer before adding tomato paste and the cornstarch mix, perhaps even avoiding the sugar entirely.
    Thought you lose the crunch then… maybe you can add some onions seared in pan before serving? (all in the humble opinion of a fellow unqualified cook)
    Also you think it would keep well in the freezer or a jar would be more indicated?
