I was looking for a way to get some protein into a light dinner and landed on stuffing my CSA jalapeños with a cottage cheese filling and popping them in the air fryer. Had this for dinner with raw veggies and light ranch on the side.
Method: I mashed up the cottage cheese a bit with a fork before stirring in the shredded cheese, chives and some seasoning. Filled the peppers and dunked them in a dish of panko then loaded up the air fryer basket and spritzed them with oil. Cooked at 400F for about 15 minutes.
