Guys let me put you onnnnn this egg white frittata that I’ve been living off the last week that’s 243 calories and 27.1g protein per serving!!
The recipe I’m putting below can make 4-6 servings depending how big you want to cut it up. I like to do 4 servings so I can get a bigger piece per meal.
Please note I don’t track calories for seasonings so this may be off by a little bit!
Ingredients:
– 105g onion
– 15g garlic
– 54g red bell pepper
– 185g zucchini
– 335g broccoli florets
– 3 slices Turkey bacon
(Sauté well with your choice in seasoning. Don’t go crazy with salt because you also will season the egg mixture too!)
Egg mixture
– 1 container liquid egg whites (~46g)
– 143g low fat cottage cheese
– 28g shredded cheese
(Add your choice of seasonings here! Seasonings I used: Turmeric, white pepper, black pepper, paprika, onion powder, garlic powder, salt) MIX WELL
- Spray your baking dish with a light coat of oil so the frittata doesn’t stick to it.
- Add your sautéed veggies to the dish and pour the egg mixture on top. You can mix it a bit to pull some veggies to the top.
- Add another 28g of shredded cheese to the top egg mixture to get a crispy top!
- Bake at 350 for 35-40 minutes or until your frittata is firm!
My parents bought a whole carton of egg whites from Costco but I literally thought egg whites were disgusting and couldn’t find any recipes that looked appetising online so I thought I would share this.
