Orzo or farro
That’s insalata d’orzo (barley salad).

Definitely not a cous cous id say.
It should be an “insalata di farro”(spelt salad).
emmer, celery, carrots, bellpeppers, olives, parsley. that’s what i’m able to see. you can find it in “Tigros” supermarket freshly made
Looks like farro to me, it’s really good. Cook it up and toss in some really good olive oil, herbs, and whatever else you like.

Farro is used in many Southern Italian dishes hot and cold.
It is either farro or orzo, not cous cous. I can see someone already gave you a giallo zafferano link 🙂
