Quick dinner, beef at 250 for an hour and then added the sausages (apple and Portuguese for about 20 minutes. Then raised to 450 for about another 20 and let rest.
Turned out great for not trying much, beef is more well done than I hoped for but it was still Mount and tender. Drizzled blues hogs raspberry chipotle and enjoyed every bite.

Right on. The tri tip is def overcooked imo. This is why I resort to internal temp instead of time. If I went by time I would have a ton of over cooked and undercooked food. Temp allows you to cook it to perfection everytime.
Awesome either way I’m sure the flavor was still decent.
