1/2 c. oats
1 scoop vanilla protein powder
3/4 cup canned pumpkin (you could also use mashed banana, but I just wasn’t in the mood for banana flavor)
2 tsp. honey
2 tsp. oil (you could try reducing, omitting or subbing with water but the fat does help with the texture and makes it more satisfying to me)
15 g. chocolate chips
Mash everything but the chocolate chips together in a bowl. Fold in the chocolate chips. Shape it into a cookie on a piece of parchment paper. Pop in the air fryer at 330 for 7 minutes. You could try a regular oven too if you don’t have an air fryer. It’s really, really big so you can always halve the recipe for a single serving, but I just save the other half and stick it in the microwave.
