Three whole yellow onions. Four in Vidalia season, as one gets eaten like fruit at some point. Plus dried or fried crispy onions, plus onion powder, plus chopped green onions, plus shallot jam or Sabrett onion sauce if I happen to have a jar in the fridge. Plus the onions in dishes I order when I do (rarely) go out to eat.

This is almost exactly what I made yesterday. Roasted some Hatch green chilies and then sauteed those with a bunch of onion. Then I chopped some panela cheese and added it to the mix and wrapped it all in a tortilla. It was amazing!
