Creamy Brocolli and Cheddar cheese Risotto made with @abbies_food 100% Italian Arborio Rice which is high in quality and gives a rich flavour. It adds a depth of taste and gives a velvety texture to the dish, making it a perfect choice for risotto.

Recipe :
Ingredients :
* 1 cup @abbies_food Arborio Rice
* 1 cup @abbies_food double Cheddar cheese sauce.
* 1 small head of brocolli, cut into florets.
* 1 onion, finely chopped.
* 2-3 cloves garlic, minced.
* 1.5 tbsp olive oil.
* 2 tbsp butter
* Salt and pepper to taste.
* 4 cups vegetable stock or warm water
* 1/2 cup milk(optional)
* Fresh thyme or parsley.

Instructions: Wash and cut brocolli into florets. Heat butter in a pan, add olive oil followed by onion and garlic. After saueting them a little add Arborio Rice and give a good mix. Now add 1 cup warm water or vegetable stock/broth. Let it simmer on a low flame for a few minutes. Add in broccoli, salt, pepper & a little water, cook it covered. Now keep stirring and adding water(1/2 cup at a time) until the rice gets a sticky consistency. Add Abbie’s double Cheddar cheese sauce and mix well. Adjust the consistency with milk(optional). Garnish with fresh herbs and your creamy risotto is ready to be served.
