This ratatouille is more similar to a French tian or Thomas Keller’s confit byaldi, which was shown in the Disney Pixar movie Ratatouille (aka Remy’s ratatouille).

It might not be the traditional ratatouille (a rustic vegetable stew) that would find in the south of France, but the thinly sliced and layered vegetables present beautifully and taste amazing with their roasted, herby flavor. So go ahead and give this stunning version a try!

00:37 Prep the vegetables for the sauce.
01:31 Make the piperade sauce (tomato and roasted red pepper).
02:25 Thinly sliced the zucchini, eggplant, summer squash and tomatoes.
03:56 Blend the sauce, then pour it back into the pan.

I have one question, as zucchini are edible as raw, and egg-plants are not – I have a problem, when I do this kind of dish each time without mistake my eggplants are in, best case, semi raw and as such not edible in my humble opinion. And I tried to make them super thing, the result was just more watery dish.
    what am I doing wrong?

  15. I love Ratatouille and I had all the ingredients so after I saw this I had to make it. I just used my simpler recipe as I had no-one to please but myself. This recipe would be great for a party and people would be SO impressed! It was delicious as always and I had it for dinner, AND for breakfast with an egg. I pretended it was shakshuka. 😉
