Not grilling, but the absolute best wing the best wings/texture I’ve ever achieved was with this recipe. Used the sauce or seasoning of your choice after cooking.
Should try baking soda instead. Raises the ph and gets even crispier. B soda crisps and b powder makes things “fluffier”

Honestly, if f you’re not gonna wash em, corn starch is the way to go. I just did thighs with 3 tbl soy sauce, 3 tbl balsamic vinegar and 3 tsp of corn starch marinade. Grilled perfection.

I’ve done it once, and it didn’t work for me:(

Corn starch is even better. And dry them overnight in the fridge. You’ll thank me.

I did this one time and it had a taste, and made the skin tough

Cornstarch works really well. Will make the skin crunchy as a potato chip.

Yes. Just use the non-aluminum stuff so it doesn’t taste metallic.

Crispier??
Almost it it confused with baking soda that is used to velvet meat for stir fry.
Thought corn starch helps too
I love crispy wings and coat in baking powder however I make wings.
Mix it into breading too 50/50 with any kosher salt you’d be using. Browns and crisps up beautifully
high heat achieves the same thing without the unnecessary pursuit of simulated fried wings.
Yes it is, helps with the skin doesn’t it?
I use this recipe for the best wings- crispy and juicy. I did some today in fact on my green egg! So good. https://youtu.be/mh2AXh1eRmE?si=4dffOxJCwhw01vFl
