Ingredients:

1 cup chopped sundried tomatoes
2 cups chopped spinach
1 jar (10oz) marinated artichoke hearts
1/2 lemon, juiced
1/2 cup coconut milk
2.5-3 cups water
1 tsp salt
1/4 tsp pepper
Vegan feta and parsley for garnish
Instructions:
