Ingredients
– Chicken: 1 kg (cut)
– Ghee: 1 tablespoon
– Onion: 2 pieces (chopped)
– Green olives: 100 grams
– Lemon juice: ½ cup (lemon)
– Pickled lemon: ½ piece (lemon)
– Green coriander: 2 tablespoons (chopped)
– Parsley: 2 tablespoons (chopped)
– Garlic: 4 cloves (chopped)
– Ginger: 1 teaspoon (ground)
– Olive oil: ½ cup
– Black pepper: ½ teaspoon
– Paprika: 1 teaspoon
– Turmeric: 1 teaspoon
– Vegetable oil: 3 tablespoons
– Salt: to taste
– Saffron: ½ teaspoon (dissolved in a little water)
How to prepare
In a bowl, mix the olive oil, saffron, garlic, parsley, coriander, and season with salt, black pepper, turmeric, and ginger.
Add the chicken pieces to the mixture, mix the ingredients until combined, then cover the bowl and put it in the refrigerator for about 3 hours.
In a casserole over medium heat, heat the vegetable oil, fry the onions until wilted, then add the chicken pieces, lemon juice, and ghee.
Cover the casserole, and leave it on low heat until the chicken is cooked, then add the olives, lemon pickles, and leave the casserole on the heat for about 3 more minutes.
Serve the chicken casserole hot.
