Chicken Gyro
Marinate:
2 lbs chicken thighs
½ cup Greek yogurt
Juice of 1 lemon + 2 tsp zest
2 tbsp olive oil
4 minced garlic cloves
2 tsp salt
2 tsp paprika
1 tsp cumin
1 tsp oregano
1 tsp coriander
1 tsp pepper
Instructions:
Marinate chicken for up to 24 hours.
Layer thighs on spits, bake at 350°F until browned (internal temp 165°F).
Rest, slice, and serve in pita with tzatziki, hummus, salad, feta, and fries!
