KFC bowls for lunch, chicken teriyaki yakisoba, and swedish meatballs with mushrooms

    KFC Bowls: (7 servings)

    1 family size package instant mashed potatoes mixed with two of the frozen mashed cauliflower packages

    Frozen corn (thrown straight in don’t pre-cook)

    Chicken nuggets (I did bake these but you wouldn’t necessarily need to, I like to get a little extra crisp on them but idk how much it really helps)

    Mexican style shredded Cheese (1/4 cup)

    Chicken gravy (I usually use brown but decided to try chicken and I do think I preferred it, not sure what KFC actually uses, maybe a blend of the two?)

    Swedish meatballs: (6 servings)

    -one whole package QFC frozen swedish meatballs (then used the recipe from the back of that bag) I baked these as directed on bag

    – slice and sauteed a whole pan full of mushrooms and half a medium yellow onion

    – add 1 can of cream of celery soup and 1.5 cups beef broth (I just did water and bullion)

    – Then add nutmeg and allspice and pepper to taste

    – I brought it to a boil and simmer for a bit, then pour in meatballs, mix together remove from heat.

    Teriyaki Yakisoba: (4 servings)

    – Take 2-3 frozen chicken thighs, salt, pepper, ginger, I pan fried mine till done and crispy, could also bake or grill. I pan fried and then removed from pan and used it to make the veggies

    – cook frozen teriyaki stir fry veggies mix according to package, add in precooked Yakisoba noodles 2-3 minutes before veggies are done. (Let them sit so they break up naturally, don’t pre steam them or anything)

    -stir in cut up chicken thighs and enjoy

    Took like 2-3 hours but was one of my smoother meal preps, and all turned out delicious

    You may not like what I’m going to tell you: stuff everything *into* the mashed potatoes.

    Mashed potatoes heat up slowly in the micro. Everything else will get chewy and rubbery if they’re not *in* the potato. I’ve done exactly what you’ve done here, and learned the hard way.
