Recipe:
– 3-4 lb pork shoulder, the more marbled the better – 4 T kosher salt – 1 lb lard – 2 tsp oregano – 1 tsp whole cumin seed – 1/2 tsp crushed long pepper (black pepper is fine, I just really like long pepper) – 5 whole cloves – 1 orange, juiced, peel reserved and cut into 8 pieces – 1 onion, sliced thin – 5 cloves garlic, smashed – 2 bay leaves – 1/2 cup water – 5 oz evaporated milk – 6 oz. Mexican coke (the drink)
1. Cut the shoulder into 6 equal(ish) pieces, cover in salt, brine overnight. 2. Preheat grill to 250. Heat lard to 250. Place carnitas into 9×13 aluminum baking pan, and pour hot lard over them. Cook in grill for 2 hours, turning every 20 minutes. 3. Add all ingredients EXCEPT for cola and water. Reduce grill temp to 200 and smoke for 2 hours, turning carnitas every half hour. 4. Add the cola and water, continue smoking for 2 hours, turning every 30 minutes. 5. Transfer carnitas and braising liquid to Instant Pot. Cook on medium under pressure for 20 minutes and let natural release. If you don’t have a pressure cooker you could just keep it in the grill for an hour or two more until the carnitas are jiggly and pull apart.
This recipe was a banger, so I decided to quadruple it here for long term storage. I substituted one of the oranges with a grapefruit. Can’t wait to see how it turns out!

I think you should get a little more smoke and bark on em before you braise them in the coke and OJ

Great sounding recipe although I like crispy carnitas – think instead of the pressure cooker I would remove from the braise, crank the heat on the smoker a bit and put some bark on those
