(Some of the) Vegan Food I Had in Copenhagen, Denmark!

Visited Copenhagen, Denmark last month to present at a research conference, and had a good time checking out the vegan food scene! These are some of the food I had~
1- Glean: Danish dessert flødeboller, i.e. fluffy marshmallow mousse (made using aquafaba chickpea water) coated in chocolate shell. Passionfruit and blackcurrant flavours here!
2- Rørt: Danish staple smørrebrød, i.e. open-face toasted rye bread sandwiches. Whole-food plant-based toppings here, consisting of mashed Ingrid peas with onions, roasted baby potatoes with cream, plus fermented mushrooms with artichoke purée!
3- Souls: BBQ cheeseburger with Beyond beef! (I also loved the gochujang tempeh burger but sadly didn’t get a good pic of it)
4- Ibiza Bowls: Deluxe salad bowl with tempeh cubes in chimichurri sauce alongside falafel with tahini and blackberry dressings. Also had a mushroom beetroot patty burger with miso mayonnaise and kimchi!
5,6- Bistro Verde: Danish pastry spandauer, tofu scramble on sourdough, chickpea flour savoury pancake for brunch~ Followed by Revo salmon cream cheese sandwich, Middle Eastern grain bowl, and hot dogs when I visited again for dinner!
7- Atlas Bar: Dishes inspired by global cuisines. Tofu manilla Filipino fried rice, lasagna, fish and chips, plus bread basket with herb butter!

8- Vital Foods: Healthy and wallet-friendly whole-food plant-based items! Mushroom lentil mince salad bowl, chickpea smash sandwich, tofu scramble burrito, and jackfruit chipotle burrito

When I saw the first pic, I thought, yup, I need that in my life! By the time I got to the eighth pic, I was ready to book my flight to Copenhagen! 😋

I’m from Copenhagen and not vegan. But I can tell, this food is among the most delicious you can get in Copenhagen. As an non vegan I love it!
I loved Copenhagen, but ate almost nothing out while being there because it’s sooo expensive, looks good though!
That looks like it cost a million kroner
