I found this recipe that I want to try out. I’ll use the longer cooking time of roughly 7 hours on low heat. But instead of getting Yukon golds, I got baby red potatoes and I plan to half them. Should I add them to the stew later so they don’t turn to mush? At what point would you recommend I do it? The final hour? Also, what about the carrots? The recipe says to throw them in immediately but would you recommend that? Never used a slow cooker before and never made stew before (unless you count chili) so this will be a learning experience lol

The beginning. So they absorb flavor.

  2. I too vote for at the beginning. They’ll taste better and you’ll mess with the slow cooker less.

Toss it all in at the beginning. That is the magic of the slow cooker. The only thing I add at the end is thickener for gravy or milk/cream for certain recipes.

  4. The beginning. Red potatoes hold theirs shape well anyways.

Follow the recipe. If it says throw it all in at the beginning, it’s written that way for a reason.

I make beef stew with baby potatoes a few times a year and always throw them in at the same time as everything else
