One of my bulk recipes that came out pretty well :3

Ingredients:
– 1 lb baby spinach
– 24 eggs
– 2-3 bell peppers, diced
– Salt and pepper
– 8 oz block of mozzarella (cheddar was a bit too greasy for me)
– Non-stick muffin tin (I haven’t tried cupcake liners, but you could probably use those with no issue)

  1. Preheat your oven to 325° F (should be done by the time you finish assembling the egg bites)
  2. Set a pot of water to boil
  3. While the water is heating, crack one egg into each divot in the muffin tin
  4. Scramble your eggs (I used chopsticks to avoid adding too much air into the egg bites)
  5. Blanch your spinach (I did it in two batches to fit in the pot)
  6. Sprinkle about 1-2 tbsp of bell peppers and 1-2 tbsp of spinach into each divot, mix around so it’s not all clumped together
  7. By now the oven should be heated; place the tins in on the middle/bottom rack, cook for 10-12 minutes or until they’re mostly solid
  8. While the eggs are cooking, grate or slice up your mozzarella (however much you want to slap on top of each egg bite; I did about 1.5” X 1.5”, fairly thin, squares. Usually would grate but it’s more work and dishes)
  9. Once the eggs are firm, move to top rack, slap the cheese on top and set to broil on high for 3-4 minutes. Make sure to watch so they don’t burn.
    Voila 😀 I have two each morning when I get to work.

    How do you get your bites to come out so clean? I spray my muffin tins lightly (maybe need a heavier dose?) and I always have to use a spoon and scrape the sides to get them to come out. Lots of residue on the muffin tin.

    Ooooh, this is great! I never thought to drop some cheese in before they’re finished! I’ve always just put grated cheese in with the rest of the ingredients.

    I generally whisk all the eggs and pour over the goods in the muffin tins. Do you find the eggs mixed enough? I did breakfast burritos this week, but might do spinach bites for next week. Thanks for the ideas!

    Yeap I do something similar and are great for breakfeast. You can add whatever you want, my husband likes with bacon but I find to heavy.
