I have been making this salad for years. It’s perfect to use up your fresh garden vegetables.
2 cups cooked and cooled couscous
2 cups diced tomatoes
1 diced cucumber
1/2 cup red onion
1/2 kalamata olives
1/2 cup feta cheese
1/2 cup basil, parsley, and mint
Vinaigrette
1/2 cup olive oil (NOT vegetable oil)
1/4 lemon juice
zested lemon
1 Tablespoon red wine vinegar
2 garlic cloves minced
1/2 tsp salt
1/4 tsp pepper

I love this salad! Next time, I recommend salting, de-seeding, & drainining the cucumber so all its juices don’t pool at the bottom of the salad and make it soggy!

Julie please don't make a "messy" house stop you from filming videos. Most of us are just like you, and not the other influencers that are seemingly perfect all the time. If anything a little bit of mess and clutter makes you more relatable and that is something I appreciate. Also if you wanted to make cleaning videos, I'd be down for that too.
