Roast and put it on burgers. Chop and put it in eggs. Dice and put it in Mac and cheese. Stuff it for a Chile relleno. Turn them into a mild green hot sauce.

Chile Rellenos or Rajas con crema, both are good, but personally, I love Chile Rellenos stuffed with cheese, with some Spanish rice and tortillas, literally drooling from how just thinking about it, I made some yesterday with my family and enjoyed them all

I know what I would do. I love me some chile rellenos. I’m hoping my poblano’s get as big and beautiful as those. They’re kind of small right now and they’ve been growing for quite a while.

Sauté the poblanos with bacon, mushrooms and garlic and finish with heavy whipping cream. When the cream has thickened, pour over lightly sautéed salmon filets!
