Once cooked and shredded, continue to mix in rub to season the meat. Spread out, season, mix and repeat till tasty. Learnt from Malcom Reed. Taste as you go to avoid over salting. Also a can of coke, orange soda, or Fanta mixed in per butt adds good sweetness and liquid that evaporates from the heat.

It’s amazing what we do for our kids these days. I’m the same way. Pretty sure my dad had my drunk uncle serving up hockey pucks off the grill for my HS graduation. We had fun though!
