Creamy Crab Onigiri
Makes 6 – 121 calories each
Ingredients
2 cups cooked sushi rice mixed with 2 tablespoons of furikake
100g imitation crab chopped into strips
30g low fat kewpie mayo
3 sheets of Seaweed
Directions
Line an Onigiri mould (cheap to buy off Amazon) with cling wrap.
Mix the fake crab with the mayo.
Put two tablespoons of rice at the bottom of the mould and squish it down to make sure it is covering the bottom evenly. Tip: wet your tablespoon to stop the rice from sticking.
Put 1 tablespoon of the crab mixture and top with another two tablespoons of rice.
Push down into mould to make sure it is packed tightly before removing.

Yum! We have a mold and we used to make onigiri all the time. My favorite is umeboshi… I think you’ve inspired my lunch 😋
