Regarding the fondant potatoes. I’ve made them maybe 4 times now. The last time I followed [this recipe](https://www.julescooking.com/single-post/pommes-fondant) to great sucsess. Mine used to look like yours, and I was totally fine with that, and the tasted great too. The recipe, linked, made my earlier efforts seem childish. I happened to have a demi in my freezer, which made the biggest difference. Don’t use the store bought powdered stuff. This comment is not intended as a put down on yours. Just a heads up on what can be achieved.
