A coworker sent me this recipe and I threw in a couple added things to spice it up. Really tasty and can be frozen and reheated. Recipe makes 8. I tripled it my second time cooking them as they were so good I ate them for lunch and dinner a couple times when my wife and daughter were eating foods that didn’t fit my plan. Ingredients: 8 low carb tortillas
3 Boneless Skinless Chicken Breasts Taco Seasoning 200g Cottage Cheese (I used 1%) 75g Plain Greek Yogurt (I used FF) Chipotle chili in adobo sauce (up to you on how many) 2tb Taco Sauce Salsa to taste (I used Pace Ghost Pepper) Salt/Pepper/Garlic powder 100g Shredded cheese (I used 2%) 1 onion chopped
Directions:Sprinkle Taco Seasoning on Chicken and Airfry on 375 for 20 min (or until done). Preheat the oven to 350. Put Cottage Cheese, Greek Yogurt, Chili, Taco Sauce and Salsa in a blender and blend until smooth. Pour sauce into a bowl, add salt, pepper and garlic powder, stir and then add cheese and onions. When the chicken is cooked, chop into small pieces and mix into sauce. Spread chicken mix on the tortillas and roll into a burrito. On a baking pan place into the oven for 15 minutes. I wrap them in aluminum foil and place them in a freezer bag. When ready to eat microwaving 3 minutes usually does the trick. Also, I usually add salt to the chicken mix individually right before I wrap the burritos. But I like more salt than most people.
