Cream cheese: 1.5 oz
Egg: 1 large
Almond flour: 1 cup
Oat flour: 1/4 cup
Coconut flour: 1/4 cup
Allulose granules: 1/2 cup (adjust to taste)
Monk fruit extract: 20 drops
Baking powder: 1/2 teaspoon
Butter, melted: 2 tablespoons
Cinnamon, ground: 2 teaspoons
Vanilla extract: 1 teaspoon
Sugar-free maple syrup: 2 tablespoons
Instructions:
- Preheat your oven to 180°C (350°F) and prepare a baking sheet lined with parchment paper.
- In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring in between, until melted and smooth.
- Stir in the egg, almond flour, oat flour, coconut flour, allulose granules, monk fruit extract, and baking powder until a dough forms.
- Roll the dough into a rectangle between two sheets of parchment paper.
- In a small bowl, mix melted butter, cinnamon, vanilla extract, and sugar-free maple syrup.
- Spread the cinnamon mixture evenly over the dough rectangle.
- Starting from one long edge, tightly roll the dough into a log. Slice into 8 equal pieces.
- Place the rolls on the prepared baking sheet and bake for 20-25 minutes, or until golden brown.
- Let the cinnamon rolls cool slightly before serving. Enjoy warm!
