    I made them rest under ac for 2 hours and in quite sure that It isnt over/under mixer. So what else can be the cause?

    I don’t like cooking on mats – I find it messes up the baking. I use mine with baking paper on to trace, then I transfer to a flat tray

    Better off using a smooth silpat for macaron!
