1 cauliflower
1 potato
1/3 cup unsweetened coconut milk( add slowly as you might need less)
3 Tbsp coconut oil
3 tbsp dry chives or 1/3 cup fresh and chopped
3 cloves of garlic
parsley
salt and pepper by taste

-Cut one cauliflower in smaller pieces and steam until cooked
-peel and cut one potato into small cubes and cook in salty water
-chop garlic and chives
– in a smaller pan sauté garlic, chives and coconut oil for a few minutes
-make sure you don’t burn the garlic
– using blender combine cauliflower, garlic mix, and add some coconut milk until mashed together
– transfer to the pot
-add cooked potato, salt, pepper, parsley, and mash with a potato masher
Add more milk if it’s too thick
– serve as a low calory side dish with meat or stew
