When I say I ate a lot, I mean it. Today I ate POUNDS of food! I ate an entire pound of carrots, i made carrot fries with cottage cheese ranch dip. (See my amazing photography skills above) I also ate them raw;it filled me up, and was less than 200 calories. Have you heard of Carrot Mash? It tastes like mashed sweet potato, but it’s very low in calories! Want a sweet treat, make a healthy protein carrot mug cake! Carrots are amazing.
Switching to eggplants: They are ENORMOUS, and also rather low in calories. Slice them lengthwise, air fry, and you have a bread shaped surface! They also taste amazing simply sautéed.
I get obsessed with a vegetable and I’ll make a million different things with them!

eggplants are SO GOOD and so so so versatile which I adore!! My favorite thing to do is slice them in half length-wise, microwave, then scoop out the inside with a spoon 🙂 it’s deliciously sweet!!
