Unfortunately my banana ganache had trouble setting, and after adding more chocolate, it started breaking slightly I think..but it tastes so good (like a banana milkshake) so I’m determined to get my ratios correct. Also had to troubleshoot assembly because I really wanted the Nilla wafer to be a part the macaron to capture that classic banana cream pudding taste. Next time I’ll just stick with the crumbles on the shell.

    I find these perfectly appealing.

    Next time you might consider β€” get a wire mesh strainer and a pasta strainer/colander. Put the colander *over* the strainer, crunch up the wafer cookies, and toss them in the colander. The big pieces stay in the colander, but all the tiny dusty crumbs fall out of the wire mesh strainer, so you’re left with even, mid-size cookie crumbs. I do this with nuts to get evenly-sized pieces
