Ingredients you'll need:

  • Almond flour: 2 cups
  • Baking powder: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Eggs: 4 large
  • Greek yogurt: 1/4 cup
  • Olive oil: 2 tablespoons
  • Honey or maple syrup (optional): 1 tablespoon
  • Apple cider vinegar: 1 tablespoon
  • Poppy seeds or sesame seeds (optional, for topping): 1 tablespoon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with olive oil or line it with parchment paper.
  2. In a large bowl, whisk together almond flour, baking powder, and salt until well combined.
  3. In another bowl, beat the eggs until frothy. Add Greek yogurt, olive oil, honey or maple syrup (if using), and apple cider vinegar. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Transfer the batter to the prepared loaf pan, spreading it evenly with a spatula.
  6. Sprinkle poppy seeds or sesame seeds on top of the batter, if desired.
  7. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Remove from the oven and allow the bread to cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely before slicing.
