After maturation my shells seem really soft and fragile, even the outside. Do they seem underbaked?

    Can you share a top down shot of the top of the shell? Thin or fragile shells (where you can easily put your finger through the shell) can indicate issues during macaronage. 

  2. water_lily

    If the cookie is not soft before filling and it becomes soft after filling and maturing, that means the filling was too wet.
