Always exciting to see first-time results. Keep adjusting how you’re searing until you find your exact groove.
Generally, get the meat as dry as possible after the bath. You can pat the meat down with paper towels. You’ll get a better sear with less moisture.
There’s a balance between cooling off before searing so as not to overcook the meat. I personally like a quick ice bath, drying the meat, and then in the fridge until about a half hour before I want to sear, but you’ll find what works for you the more cooks you do.
Avocado oil, ghee, anything with a high smoke point will be helpful to use with the cast iron.

Everyone is making jokes about the butter but no one has actually explained it yet.
Experiments by community members have almost universally shown that putting butter or other oils in the bag dilutes the flavor rather than adding to it. You should try it without next time.

A good rule of thumb is “Nothing in the bag but salt”. The butter takes flavor away. The herbs might add some cling aroma, but nothing penetrates the protein but salt & smoke. It makes a pretty photo but does not add to the flavor. The photo is a lot of tri-tip with nothing but salt.
When did this sub become so fucking stupid about butter and garlic? Butter is tasty, and the idea it subtracts from flavor is not supported by evidence. And botulinum toxin isn’t gonna be produced by garlic during cook time for a steak.
