Ooh, I made the spatchcock chicken last night too! What temp and time did you use?
Whenever I make oven recipes, I swear it always takes so much less time in the oven than I’m expecting. Recipe called for 230c convection for 45 min, but my chicken was already at 65c/80c internal by the half hour mark. Bought a new oven thermometer to check it and everything.
I wonder if these cook times are inherently conservative, cause it’s been a consistent issue I’ve noticed with a lot of recipes, where 80% of the cook time usually gets me the temp I’m looking for, but if you’re not measuring, better overshoot than under?
