Thanks for all the answers to my previous post. The brisket turned out quite well and was a hit. Definitely some improvements can be made but I was pleased with the outcome for my first try.

Sure looks juicy to me.
I will say though, I recently bought some Meat Church Holy Cow and while I’m not sure if the flavour was that much better than S&P plus Lawry’s I definitely got way better bark than before.
For pellet grills I think it’s worth it to try different rubs to see how it affects the bark.

Looks good to me. Too much seasoning blocks the smoke from getting into the meat. Plus I want to taste meat and smoke flavor not a shit ton of seasonings.

Depends on who you ask. I like my meat seasoned and a nice peppery bark. My wife likes it less seasoned.
