My wife says this is her new favourite cut of beef, and it didn’t even go as planned!

On at 225 for an hour and a half, and these things were reading 130 and 135. I pulled them and let them rest for an hour and a half, then when the sides were done, I did a quick sear at 600, rest for 5 mins, then started slicing.

    They are my favorite as well. I like my fat cap crispy though.

    Picanha roasts… love them.. score the fat cap and rub with salt.. smoke to rare… finish in the airfryer.. makes the fat cap crispy.. and renders it some thru the roast
