Was so into it that I forgot to take many pics, but I'd call first attempt at smoking beef short ribs a success! These things were massive. Traegar at 210 for first 2hrs then 250 the next 5 til 203°.

My only criticism was that (I know this comment is heresy here) I think the bark was actually too thick. The inside was moist and tender but my bark for some reason was so crisp and thick that it kind of detracted from it. Maybe it's because is cut them for more surface area before smoking? Next time I'll try putting the whole slab on and cut after.

    They look great! I’d for sure do them as a slab next time, and maybe leave some fat on top to render, that should help with your bark issue
