Ingredients:
– 2 tbsp of butter
– 2 tbsp olive oil
– a bit of flour
– salt and pepper
– 2 onions
– 2 springs of celery
– 2 carrots
– 1-2 shallots
– 2 cloves of garlic
– 1 can of peeled tomatoes.
– 150 ml white wine
– 2 leaves of laurel
– 3 brines of thyme
– 500 – 700 ml of beef bouillon
Cover with a lid and put it in the oven for around 1 hour 30 at 180•Celsius.
For risotto you will need:
– 2 shallots
– 45 gr of butter
– 1 small garlic or half of big garlic
– 230 gr rice for risotto
– 20 cl white wine
– 600-800 beef bouillon depending on your rice
– a few saffron filaments
– 42 gr Parmesan
– a bit of butter.
Gremolata:
– Parsley
– 1 clove of garlic
– 1 tbsp of zest of a lemon
