Whilst waiting for a pizza I was handed this.
No idea what it was but it was amazing.
Really fatty, oily and peppery. I tried to ask the owner what it was but he didn’t speak English and my Italian is very poor.

I would say “coppa di testa”. It’s a cold cut made with pig head parts.

Is something you can find all over italy with different names. Made with park head and bones.
I can only recognize the pork over there.

This looks very similar to what we call in southern US, “hog head souse.” Is this eaten cold or warm?
You might find it in English speaking countries as _head cheese_

This is coppa di testa! It’s a common cold cut in middle italy made with various parts of the pork.
