Obligatory photo of this behemoth. I lurked and commented on here the past few weeks eyeing it on clearance. Primed and burned in yesterday, first cook today!

Already had ground turkey defrosted and that got me thinking. Then after some youtubing settled on giving an Over the Top recipe a shot.

The secret ingredients were some bacon fat I basted the turkey with to prevent it drying out. I had 93/7 so I was really concerned I was gonna end up with a tasteless brick but nope! Did the job.

I also had a jar in the fridge of drippings from pulled pork I did in my instant pot (for sure will be smoking one next go around) and tossed half that in there. The rest of my ingredients were lame, a McCormick packet, black beans, an onion, tomato sauce, and some corn cause it was either that or toss em.

This is where I got a little crazy: I used the same ingredients for another batch but on the stove like normal. Made my wife do a blind taste test and she immediately could taste the difference. It was insane! Of course will get more sophisticated from here, but for my first cook winging alterations to a recipe with basic ingredients, really highlighted the beauty of smoking for me.

Definitely going head first into this new obsession!
