129 for just over an hour, pat dry, fridge to rest for 10 minutes, then the thinnest layer of Kewpie mayo for crust. Sear in flat cast iron pan. Delicious.

    Interesting, why mayo for the crust especially when you sear it? I imagine it’ll get rid of the flavor
