Sorry not good at plating. I don’t run a blog, just sharing some recipes.

All meals made with low cal ingredients in my carbon steel pan.

Egg white chilaquiles
4 mission extra thin corn tortillas: 160 cal
3 serving Costco egg whites: 75
Dollop low fat sour cream 40
Enchilada sauce 25-40
Extra virgin olive oil (thin coating) 25-40
Optional: beans, dried cilantro
Spices: chives, cayenne pepper, black pepper, Trader Joe’s chile lime seasoning

Leave tortillas in cool dry place separated by paper towels for a few hours to overnight (optional, helps dry)
Stack and Use scissors and cut the tortilla into 4-6 sections. Layer in pan. Partial cook and flip to cook more. Consistency should be both chewy and crunchy in areas. Add enchilada sauce being careful not to soak. Transfer to plate. Top with cooked egg whites, beans, sour cream, season to taste.

Low cal cheesy sourdough turkey dogs
2x ball park turkey dogs, 45 cal ea
2 slices Vons signature artisan long loaf sourdough, 60 cal each (or your favorite low cal bun)
Small palm full favorite cheese (I used Ralph’s sharp cheddar), 80 cal
EVOO coating, 25-40 cal
Spices: garlic salt, black pepper, chives

Cook dogs, sprinkling garlic salt and pepper. When you do turn to the final side add in the bread cut lengthwise. Sprinkle cheddar on it like you were making a grilled cheese. Add chives to the cheese. The cheese will gooey up and hold the chives, bread, and dogs together.
Top with favorite low cal toppings. I like mustard, SF baby ray’s, and a dash of katsup.

Trader joe heart of palm linguine marinara
1/2 package Trader Joe’s heart of palm pasta, 30 cal
Slightly more than a serving (5oz) of barilla marinara, 63 cal
EVOO, 25-40 cal
1/4 container Costco canned chicken Breast chunks, 53 cal (or mushrooms, or ground turkey meatballs you made, etc)
Dash water
Dash Parmesan cheese
Spices: garlic salt (for all garlic salt I substitute smoke n sanity essence of garlic salt as I am FODMAP), black pepper, chives, basil, Uber light dusting of cayenne pepper for a kick – the smallest amount!

Pre rinse heart of palm pasta in water if it taste/smell too strong (just for 30 sec)
Heat up pan, toss in EVOO, water, add heart of palm pasta, spices, stir/fold and let warm up. Add barilla marinara (marinara is one of my favs and doesn’t get me ill, use your favorite sauce), add chicken or protein, partial cover so excess water can evaporate. Top with dash Parmesan and serve warm. I just had this for dinner it was amazing. I could have used a slice of my 60 cal sourdough to make it better as a side dipper.

Egg white French toast
2 slices favorite low cal bread (used my 60 cal Vons sourdough)
Approx 3 servings Costco egg whites
EVOO, 25-40 cal to coat pan

Above is the basic recipe then you add low cal topping.
Here I took a stick of butter and just quickly wiped both faces for flavor, couldn’t be more than 25-40 cal.
Right one has pumpkin spice, could easily be cinnamon etc. I don’t eat sugar so if you need to sweeten you do you.
The other I used a spoonful of PB2 chocolate peanut butter and spread it to combine with the butter. And then a spoonful or two of smuckers’ sugar free blackberry jam. So yea it’s chocolate blackberry tasting. Someone who doesn’t eat low cal might not appreciate it but I like it.

Just cook it on one side, add toppings after you flip, add smuckers at the end.
