    No issues at all. Just know that the denser the package is filled, the longer you need to cook to ensure everything gets up to temperature. I’ve done a gallon sized bag completely packed with bone in thighs. Ran it 160 for 24 hours and it was absolutely perfect.

    Yes. Although technically, you should consider it one broad piece of meat rather than 3 individual pieces of meat in this case. This can sometimes make a difference in pasteurization time since heat enters from the sides as well as the top and bottom and has farther to go in this case (as discussed by Baldwin).

    You can sous vide the chicken in the marinade at the same time?

    All there’s left is to sear it right? That takes away leaving the chicken to marinate before beginning the sous vide

    Yeah it’s fine you only get into sketchy territory when you have like 2 breasts on top of each other or something. Even then…you just cook for longer.

    Perfectly fine. They MIGHT (probably not) slightly stick together and look weird, but no biggie.

    Its fine. you dont want to stack things up on eachother or totally cover things up but just touching is fine.
