Prime for $4.34/lb? Why not. Went in for a pork butt, walked out with ~ 20 lbs of meat. I've watched plenty of of videos, logged plenty of cooks and finally took the brisket plunge.

Planning on 225° then foil boat with tallow from the trim once bark sets around 160°-180° over hickory chunks on the Member's Mark 36".

What should I watch out for?

    I had a bad experience doing a foil boat with brisket, even after it worked great for beef ribs. I’m sticking to normal butcher paper wrap with butter/fat moving forward

    I’ve never foil boated a prime brisket. I trim less now than I used to, apply a homemade rub, and onto the cooker it goes. Lid down, lid up however many hours later, and then into a cooler wrapped in towels for 4 hours before slicing and vacsealing.

    Comes out tasty every time.

    Next time I have choice briskets, I’ll wrap one at the stall and leave the other unwrapped for a head to head comparison.

    Last time I did that wrapped/unwrapped test with beef ribs, the end results were indistinguishable to either myself or the gf. So now the default is unwrapped, at least for prime.

    Man I just season in the am or the night before. I usually chuck it on about 11PM at 225, I check it at 7 or 8 in the morning whenever I get to it and is usually in the 150 or 160 range: I’ll either let it ride or bump the temp depending on when we are eating. I let it ride until probe tender in the flat, point is usually done first but it works for me.

    I’ll pull it and wrap in butcher paper and either west in the oven or cooler. I don’t think I’ve ever rested less than 3 hours and have gone as long as 6. Always turns out, it’s stupid easy.

    This was my last one after about 9 hours at 225, choice…no prime at Costco, turned out just as good.

    The temp probe is for low temp alarm, had installed a brand new igniter before the cook so wanted some insurance
