I love BB’s recipes as bases for my own cooking and wanted to make 2 meals with similar ingredients. I always tend to use a lot more veggies than she does to volumize the meals and adjust seasonings to my own taste. I got it done within 2 hours while working comfortably.
For the soup, I thickened with flour and butter to make it more stew-like. I used premade frozen meatballs to save some time.
For the casserole, I used ground turkey (on sale), topped with premade crescent rolls I ripped into pieces, added the other bit of spinach I had left from the soup and skipped the corn. I think next time I’ll either add even more veggies, maybe different ones to shake up the flavors, or possibly will double to 2 lbs ground turkey to make each serving more filling.
Anyways, it’ll make the week a lot easier for my partner and I 🙂
