Low carb, High protein Stuffed chicken for dinner!
Ingredients: – 2 chicken breasts, patted dry – 1 tbsp olive oil – Italian herbs mix – garlic powder – salt & black pepper to taste stuffing: – 1/2 cup tightly packed spinach, chopped – 60g canned or marinated artichoke hearts, chopped – 2 1/2 tbsp cream cheese, softened – 50g grated mozzarella cheese – 20g grated parmesan cheese – 1 minced garlic clove – salt and black pepper to taste
Instructions: 1. Preheat oven to 220C/425F. 2. Mix the stuffing ingredients. 3. Slit chicken lengthwise being careful not to cut all the way through. Gently pound it flat. 4. Stuff each chicken breast with 1/2 filling and seal with toothpicks. Season each side with Italian herbs mix, garlic powder, salt and black pepper. 5. Heat 1 tbsp olive oil in an ovenproof skillet. Place chicken breasts and sear each side for a 2-3 min. 6. Move it to the oven and bake for 8-10 min or until the chicken reaches an internal temp of 74C/165F. Enjoy and follow for more.
