

First, I have yet to be disappointed by a HF barramundi meal. I love them all. This one was great and it even tasted better when I had the second portion for lunch the next day. I think the basil sitting on top when it reheated really added to the flavor of the fish.
I thought using the basil packet made this taste so much better than if I had to chop fresh basil which I was surprised by. I think when I make it again, I would add just a bit more butter when making the spread so it will “spread/cover” the fish easier.
I also started adding either chicken or vegetable broth concentrate (the same kind HF uses but I purchased from Amazon) to the potatoes as they’re boiling for extra flavor. It had that in a recipe I got when I first started and I’ve done it most times ever since. It adds great flavor and I can use less salt/butter when I’m mixing them. Just keep some of the water so you can add as you’re mixing. Definitely try it if you haven’t done so, it’s a game changer!
This is easy to recreate also. I’ve seen frozen barramundi at Costco and Sam’s Club. If you love fish, definitely give this a try!
(Prerequisite no green beans cause I hate them. Also this was a meal I had frozen because I wasn’t able to cook it when I received it weeks ago).
