Thai curry is one of my comfort foods, especially massaman curry. I add more veggies than you find in a traditional massaman curry, I love broccoli and carrot! I overcooked my broccoli today 😅 but I hope it'll still taste good!
Bonus: this is a one-pot dish!
Ingredients for 4 portions:
– 260 grams of jasmine rice (uncooked)
– 2 cups of broccoli
– 2 cups of carrots
– 2 cups of potatoes
– 1 can (400 ml) of coconut milk
– 5 tbsp of massaman curry paste
– 2 tbsp of brown sugar
– 1 tbsp of tamarind paste
– 1 tbsp of fish sauce
