I’m sure this has been asked plenty of times, but I can’t think of a proper query to find a previous post.
Why would this fruit ripen this way? I am most curious to see if it all turns red with time. Been watching the left side get deeper and deeper red for a week, but the right side is as green as can be. Decided it needed to come inside just to see if the green side ever turns.
It’s a “rescue from the nursery dumpster” plant so I have no idea of the variety, but this is smaller than what the plant has been yielding.

A lot of beefsteaks can develop this uneven ripening. I don’t know what causes it, but it is not desirable, it is a blemish that would make it difficult to sell. As a gardener though, you can just cut off the unripe part and use the ripe part.
