So I did all the prep-cooking (frying beef/veg, simmering, sauce etc), combined in cooker and left that in the fridge overnight. Turned on the slow cooker this morning and it'll be done in 8 hours.
My guest is no longer coming over so I have a load of beef bourguignon to use up. Can I just freeze it after the above steps (prep cooking, overnight fridge and 8 hour slow cooking)?

Yes, you should be fine!
I made that exact recipe of beef bourguignon late last year and discovered I still had some portions frozen this week. Heated one up in the microwave and it was still delicious!
